Where the craftwas first learned.

In the quiet shadow of the Matterhorn, time moves differently. Lamination is measured in hours, fermentation in days, mastery in years. The Alps taught us a patience that still shapes every loaf, every truffle, every croissant we bake on Main Street, Biddeford.

    The doors open

Edelweiss Pastry Shop officially opens its doors. A dedicated team of three bakers embrace the baker's life — including those quiet 2 AM shifts where the magic happens.

“We aren't just baking bread and tempering chocolate; we are sharing a piece of our history and the culture that shaped us.”

— Alex & Valentina, founders

Today, Alex, Valentina and a dedicated team of three bakers couldn't be more proud to be a thread in the fabric of this thriving community. Seeing the people of Biddeford show up for them every single day the doors are open is the greatest reward for their 19-year journey.

The pastries and chocolates looked amazing! One of the best ham & cheese croissants I have ever had. The cream puff with hazelnut cream was also delectable. The chocolates were perfect. This place is legit. I highly recommend.

Every single pastry we tried was absolutely incredible — beautifully made, perfectly balanced, and not overly sweet. It feels like a small European bakery: refined, fresh, and clearly made with care.

The lemon bar was by far one of the best I've had in the states, if not ever. The hazelnut cream filled roll was also top notch. This place is a must — I'm looking forward to next time!

All the pastries are exceptional! You're bound to find one (or more) for your choosing — flaky crusts, rich and velvety creams or gooey, nutty, sugary spices.
